The bananas in my kitchen are starting to get all brown and mushy. I think it is about time to make banana bread! But we don't want to be eating all that extra sugar so we replace the sugar in the recipe with honey, maple syrup or molasses (molasses is the best choice because it is the highest in antioxidants). Make it with whole wheat flour to make it even healthier. I also replace the butter with apple sauce. It makes it really moist, healthy and has a yummy flavor. Last time I threw in a bunch of blueberries but this time I think I'll put in a handful of chocolate chips, maybe try walnuts. I know these suggestions may sound like it would ruin the bread but it seriously is delicious, just ask Jonathan! Other suggestions for mushy bananas are pancakes, banana muffins, berry smoothies (1 cup OJ, 1 cup berries, 1 banana, 5 ice cubes, blend together), banana pudding, banana cake, etc. So have fun being creative with food! As you can see there are lots of options out there. This ends my weekly recipe post. I hope 6 is enough. =)
