Jonathan's Carrot Cake

Yep, Jonathan turns 27 today! But since he has to go to school all day and I have a book club meeting tonight we celebrated yesterday. I made him a really yummy carrot cake, and I will be sharing the recipe with all of you now. It is based off of this recipe for carrot cake from All Recipes. I made some alterations based on what other users suggested and it turned out really moist and yummy.

Lol, messed up on my cake writing a little. =)

Cake:

4 eggs
3/4 cup vegetable oil
1/2 cup apple sauce
1 cup white sugar
1 cup brown sugar
1 tablespoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1/4 teaspoon nutmeg
3 cups grated carrots (grate them on the side of the grater you'd grate cheese with, otherwise too much carrot juice will accumulate and the cake will be mushy.)

Cream cheese frosting:
1/2 cup butter, softened
8 ounces cream cheese, softened
3 cups powdered sugar
1 teaspoon vanilla extract

  1. Preheat oven to 350 degrees. Grease and flour two 9 inch cake pans.
  2. In a large bowl, beat together eggs, oil, apple sauce, white sugar, brown sugar, and 1 tablespoon vanilla extract. Mix in flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir in carrots. Pour into prepared pans.
  3. Bake in preheated oven for 30 to 40 minutes, or until toothpick inserted into the center of cake comes out clean. Let cool in pans for 10 minutes, then turn onto a wire rack and cool completely.
  4. To make frosting: In a medium bowl, combine butter, cream cheese, powdered sugar, and 1 teaspoon vanilla extract. Beat until mixture is smooth and creamy. Frost cooled cake.
